Chicken Biryani is a dish that needs no introduction. It’s a timeless classic that has won the hearts of food lovers around the world. Originating from the royal kitchens of Hyderabad, this dish combines fragrant basmati rice with tender chicken, aromatic spices, and herbs. In this blog post, I’ll walk you through my version of Spicy Chicken Biryani, a recipe that’s sure to leave your taste buds dancing with joy.

Ingredients:

  • 500g chicken, cut into pieces
  • 2 cups basmati rice, soaked for 30 minutes
  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 1 cup yogurt
  • 2 tbsp ginger-garlic paste
  • 4-5 green chilies, slit
  • 1 tbsp red chili powder
  • 1 tbsp turmeric powder
  • 2 tbsp biryani masala
  • A handful of fresh coriander and mint leaves, chopped
  • 1/2 cup fried onions
  • 4 tbsp ghee or oil
  • Whole spices: 4-5 cloves, 2 bay leaves, 4-5 cardamom pods, 1 cinnamon stick
  • Salt to taste

Instructions:

  1. Marinate the Chicken:
    In a large bowl, combine the chicken pieces with yogurt, ginger-garlic paste, red chili powder, turmeric powder, biryani masala, and salt. Mix well to coat the chicken evenly. Cover and let it marinate for at least 1 hour, preferably overnight for deeper flavor.
  2. Prepare the Rice:
    Boil water in a large pot with a pinch of salt and a few whole spices (cloves, cardamom, bay leaves, cinnamon). Add the soaked basmati rice and cook until it’s 70% done. The rice should still have a bite to it. Drain the rice and set it aside.
  3. Cook the Chicken:
    Heat ghee or oil in a heavy-bottomed pot. Add the sliced onions and sauté until golden brown. Add the chopped tomatoes and green chilies, and cook until the tomatoes turn soft. Add the marinated chicken and cook on medium heat until the chicken is almost done and the oil starts separating from the gravy.
  4. Layer the Biryani:
    Reduce the heat to low. Spread half of the cooked rice over the chicken in the pot. Sprinkle half of the chopped coriander, mint leaves, and fried onions. Add the remaining rice and top with the rest of the coriander, mint leaves, and fried onions. Drizzle a little ghee or oil on top for added richness.
  5. Dum Cooking:
    Cover the pot with a tight-fitting lid or seal it with dough to trap the steam inside. Cook on low heat (dum) for about 20-25 minutes. Alternatively, you can place a heavy pan on top of the lid to create pressure.
  6. Serving:
    Gently fluff the biryani with a fork to mix the layers before serving. Serve hot with raita, salad, or a tangy pickle on the side.

Tips:

  • To enhance the flavor, you can add a few strands of saffron soaked in warm milk while layering the rice.
  • Use aged basmati rice for the best texture and aroma.
